 Truffled Mashed Potatoes


Several years ago Joseph and I attended a cooking class and I was introduced to truffle oil. Truffle oil is olive oil that has been infused with the flavor of truffles. It is delicious and the perfect addition to any dish. I have added truffle oil to French fries, scrambled eggs, and now mashed potatoes.


Truffle oil can be a little pricey, but keep in mind a small amount goes a long way. It is worth the extra money and you will understand why once you have tasted it. 
These Truffled Mashed Potatoes will give your old recipe of regular mashed potatoes a run for their money. I hope you enjoy! 

The Ingredients:
2.5 pounds of Organic Red Potatoes
1 Cup of Organic Heavy Cream
1/2 Cup Organic Plain Greek Yogurt
1 Tablespoon Truffle Oil
3 Tablespoons Organic Butter

The Instructions:
1. Boil the potatoes in water until they are tender.
2. Drain potatoes and smash them until desired consistency. (I enjoy mine with a few lumps)
3. Heat cream and butter and add potatoes.
4. Add Greek yogurt, truffle oil, and salt and pepper. Mix and taste to get desired flavor.
