Easy Weeknight Pasta
This dish has become a new family favorite. If you enjoy cheese and tomatoes, you will love this recipe. I usually keep a stock of these ingredients on hand at all times, so it makes for a quick and easy dinner on weeknights.
Both goat cheese and feta cheeses will work in this recipe. I prefer goat cheese, but I have used feta and it is equally delicious. I have also used olive oil that has been infused with truffles and that is also another option to incorporate in this dish.
The Ingredients
10 oz. Organic Petite Tomatoes
4 oz. Organic Goat Cheese or Feta Cheese
5-6 Organic Garlic Cloves
Organic Olive Oil
Kosher Salt and Pepper
Greek Seasoning
12 oz. Organic Bow Tie Pasta, cooked
The Instructions
1. Preheat the oven to 375 degrees.
2. Place petite tomatoes and garlic cloves in a casserole dish and drizzle with olive oil and salt and pepper. Toss them around to make sure they are well coated.
3. Add goat cheese or feta and place in the middle of the dish.
4. Drizzle a little more olive oil on top of the cheese.
5. Sprinkle with Greek Seasoning and place in the oven for about 20 minutes.
6. Once out of the oven, stir the cheese and tomatoes together and then add the cooked pasta. Serve with a side salad and bread.
