Enchilada Stackers

 We do not normally have Mexican inspired dishes in our home because we eat a Mediterranean diet. However, my boys really enjoy tacos and enchiladas on occasion. Plus, I had some of my readers reach out to me asking for some delicious Mexican inspired recipes. These Enchilada Stackers are DELICIOUS!

My husband ate these up and he doesn't even enjoy Mexican food. He loved them! They have cheese, they have chicken, they have fresh cilantro, they have everything that makes a delicious enchilada! 

Enchilada Stackers


Ingredients:

12 5-inch organic corn tortillas
1 1/2 cups green or red enchilada sauce
4 cups shredded, cooked organic/ natural chicken 
8 ounces shredded organic Monterey jack cheese
Thinly sliced organic radishes
Fresh organic cilantro

Instructions:

1. Preheat oven to 425 degrees.
2. Arrange tortillas on two baking sheets and bake for 5 minutes until slightly crisp.
3. Line baking sheet with parchment paper and lay 4 crispy tortillas on the paper. Top each with 2 tablespoons enchilada sauce, 1/2 cup chicken, and 2 tablespoons of cheese. Top each with a second tortilla. Repeat the layers of sauce, chicken and cheese. Top each third tortilla with the same toppings again. You will  have four stacks with three tortillas each. 
4. Bake for 5 minutes until cheese has melted.
5. Garnish with fresh cilantro and radishes. 
6. Serve and enjoy!
