Slow Cooker Greek Chicken Chili
I try to use my slow cooker as often as I possibly can. It is such a wonderful feeling to come home from work after a long day and have a warm meal that is ready to serve. This Greek Chicken Chili will warm your heart and your stomach!
Ingredients:
2 Tablespoons organic olive oil
2 Teaspoons Kosher salt
1 Teaspoon dried organic oregano
1 Teaspoon ground organic black pepper
Zest of 1 organic lemon
2 Teaspoons minced organic garlic
2 Pounds natural boneless and skinless chicken breast
4 Cups organic chicken broth
1 Organic red bell pepper
2 Medium organic zucchinis, diced
1 Can (14 oz.) artichoke hearts, drained and roughly chopped
2 Cans (15 oz.) garbanzo beans, drained and rinsed
8 Ounces organic cream cheese, cut into pieces
6 Ounces organic feta cheese crumbles
2 Tablespoons fresh organic dill, chopped
Pita Bread
Instructions
1. Combine olive oil, salt, oregano, pepper, lemon zest and garlic in a small bow.
2. Place the chicken in the slow cooker and pour oil mixture over the chicken.
3. Add broth, vegetables, and beans. Place cream cheese pieces in the middle of the slow cooker. Make sure no cream cheese pieces touch the side. (This prevents the cheese from over cooking.)
4. Cover and cook on low for 6 hours.
5. Remove chicken, shred and return to the slow cooker. Stir to combine and adjust seasoning to taste.
6. Serve Chili topped with feta crumbles and fresh dill. Use pita bread for dipping.
