Baked Brussel Sprout Casserole


I really enjoy eating Brussels Sprouts. They are one of my most favorite vegetables and I can eat them sautéed with olive oil or baked in the oven to get them nice and crispy. Anyway you fix them, I will eat them!

My children enjoy broccoli with cheese and I thought that this recipe would be a way to get them to try to eat a different green vegetable. Adding cheese to Brussels sprouts makes them even more delicious just in case you are wondering!


Baked Brussel Sprout Casserole

Ingredients

2- 12 ounce bags of organic Brussel spouts, halved
1 cup heavy cream
2 eggs
1 teaspoon Kosher salt
1/2 teaspoon organic pepper
1 1/2 cups organic cheddar cheese
1 sprig fresh organic Rosemary, minced
1 teaspoon onion powder
1 teaspoon garlic powder
1 teaspoon paprika
2 tablespoons organic olive oil

Instructions

1. Preheat oven to 350 degrees.

2. Place halved Brussel sprouts in a greased casserole dish.

3. Whisk together heavy cream and eggs. Add salt, pepper, 1 cup of cheddar cheese, Rosemary, onion powder, garlic powder, and olive oil. Stir until well combined. 

4. Pour wet ingredients into the casserole dish with the Brussel Sprouts.

5. Top with the remainder of the cheddar cheese.

6. Bake in oven for 30 minutes.
