Greek Salad

This Greek salad is a wonderful make ahead dish that works well to be packed in lunches or to enjoy for dinner. I am constantly looking for something to spice up my lunches that I pack everyday and this salad is just bursting with all types of delicious flavors. 


The Ingredients:

2 Organic Cucumbers, chopped into cubes
1 Cup Organic olives
1 Cup Organic cherry tomatoes, cut into halves
1/2 Cup Organic red onion, diced
Organic Feta cheese, crumbled
4 Tablespoons balsamic vinegar
2 Tablespoons olive oil
Kosher salt and pepper

The Instructions:

1. Place cucumbers, olives, tomatoes, and red onion in a large bowl and toss together. 
2. Drizzle vegetables with Balsamic vinegar and olive and sprinkle with salt and pepper.
3. Top the salad with as much feta cheese as you like.
