Kale Chips

Let's face it, potato chips are not the healthiest snacks. They are full of stuff that nobody really knows about and they leave one feeling less than full.

These kale chips are everything  you could ever want- they are crunchy, salty, and they will fill you up, unlike the potato chips. As I mentioned in my previous columns, kale is high in Vitamin C and it is highly nutritious. This healthy snack is simple to whip up when those potato chip cravings hit.

The Ingredients

1 or 2 bunches of organic kale, cut into strips
Organic olive oil
Kosher salt and pepper, to taste

The Instructions

1. Preheat oven to 375 degrees.
2. Place kale on a large cookie sheet.
3. Drizzle kale with olive and sprinkle with salt and pepper. Make sure the kale is evenly coated with the olive oil.
4. Bake in the oven for about 10 minutes or until Kale is wilted and crispy.
5. Pour into a bowl and enjoy.
