Chicken and Leek Soup
I prepared this soup for dinner last week. According to Joseph, my husband, the celery is what made it extra delicious. Who knew?
I had actually never cooked with leeks before, but they are really good! This soup is a great way to enjoy all your green veggies in one bowl.
Chicken and Leek Soup
INGREDIENTS
1/2 Cup Organic Olive Oil
2 lbs. Chicken Breasts, cut into bite sized pieces
1 Large Leek, cut into thin rounds
4 Green Onions, chopped
4 Celery sticks, chopped
1 Small Cabbage, cut into slices
1 Cup White Wine
Kosher Salt and Pepper, to taste
1/2 Tsp Paprika
3 Cups Water
INSTRUCTIONS
1. In a soup pot, heat olive oil. Add chicken and saute' until cooked on the outside. Add leeks, green onions, and celery. Saute' for 1 minute.
2. Add cabbage and saute' for a few minutes until tender. Add wine, salt, pepper, paprika, and water.
3. Cook on low heat for 45 minutes.
I served this with Whole Grain bread and olive oil.
